OP you should go and see a doctor about that. Human body at it's core function tends to lean towards putting on weight. You either have a crazy metabolism or something is up.

One cause of underweight is chronic diarrhea or weak digestive system. Absorbed nutrients can bleed out of the large intestine. Underweight (especially continuously dropping weight) is frequently mentioned in the list of symptoms one must watch for in many digestive disorders and cancer.

I feel like I can rarely put weight on, I'm the same weight as I was when I was 16 and I'm 33 now. I've got Ulcerative Colitis though I've not had a bad flare up for years, just everything goes from mouth to out my ass in about 4 hours, I'm taking codeine to slow it all down and it seems to help but not noticed any significant weight gain yet.

You are prescribed codeine for that? Are you in the US? I've got the same issues and my uncle said opioids will bind you up slightly. I looked into it but doctors look at me like a junkie when I ask about it. Been skinny AF my entire life and have had multiple doctors and hospitals check me out with no answers.

I must say though, I categorically cannot eat cereals without that acting like chilli. It's not gluten, I've been tested. Same thing happens for gluten free corn flakes, oats, ready brek, lucky charms. Can't eat anything out of the cereal isle without experiencing rapid transit time even on codeine, Pop Tarts and continental breakfast things are ok though 🤣. I take 30mg in the morning and half a tablet about 4/5 hours later to keep my opioid levels up as I think it's half life is 4 hours.

I don't know the exact number but I'm pretty sure overweight people outnumber underweight people like 100,000 to 1. So that might be why.
