Potatoes are a lot more expensive and more labor intensive to make than rice. Each one needing to be peeled is a huge time and labor sink. Whether it's done prior to shipping or at each location, it has to be paid for somewhere. You multiply that by hundreds of restaurants and thousands of employee salaries -- and there's your answer. These massive chains consider *everything* when they add or remove a menu item due to the economy of scale. Cost of even $0.01 being the first one. The price of tomatoes going up or down a nickel is hugely important to Chipotle.

Idk about them being expensive but the first thing that came to mind was how much of a process they have to go through to be edible and not only that, they have to be consumed quickly or they rot.

For me it's weird having a rice and burritos. I grew up in Wyoming and we always had potatoes in burritos. A lot of the mom and pop shops in the area that did burritos did the same. It wasn't until Chipotle showed up though rice became normal for us (which is weird because I think they started in Denver). I will say Qdoba does offer a breakfast burrito with potatoes and that stuff is legitimate
