The concept that it smells like rotten stuff still applies. Even if it's not truly spoiled, fermented things usually don't smell very good and that's enough to keep someone away from eating that. It's a natural response to show disgust towards something that smells like it's gone bad. (Or something that simply has a very cutting odor)

It sounds like you don't understand the difference between fermentation and spoiling. You can make mozzarella at home in an afternoon. There are plenty of high quality cheddars out there as well. Aged cheddars develop a wonderful nutty flavor. And people in Japan drink beer, and often. They make beer. Sapporo and Asahi are popular brands. You might be thinking of \*root\* beer.

You're right it was root beer. I know the difference between fermented and spoiled, it's just that often time (not always) things that are fermented smell bad. Same for spoiled things albeit spoiled food may smell even worse since it's literally spoiled and not fermented.

Fermentation is really important in human history. It is a critical method of food preservation that has allowed cultures to survive, thrive, and expand. There is a plethora of fermented foods out there besides cheese. Bread, fruits, vegetables, and meat all can and have been regularly fermented throughout history.
