People who buy balsamic vinegar are the same people who buy extra-virgin olive oil thinking that it's high quality/healthier because it sounds fancy.

Balsamic, and good olive oil, have a completely different flavour profile and range of uses. Go buy a nice baguette. Take one piece and dip it in some olive oil and balsamic, and dip the other in canola and white vinegar and come back and tell me that people only buy it 'cause it's bougie.

I think you missed the point that I'm trying to make, perhaps that's on me for expressing it poorly. A lot of people who buy extra virgin olive oil rather than regular olive oil don't know the difference between the two and only buy it because they think it sounds fancy. Extra virgin olive oil has very different uses in cooking because of it's low smoke point which makes it unsuitable for a lot of dishes but many people still buy it because it's usually perceived as being "better" than regular olive oil which simply is not the case. I see a lot of people who think the same about vinegar and balsamic vinegar. They have very different uses but most people don't know the difference and tend to think of one as simply being higher quality than the other even though this isn't at all true.

It's made of the same stuff as wine. It's meant to enhance foods and provide contrast to other flavors. Like any other food, not everyone is going to enjoy it. You may survive without it.
