Lesbian - It's not just a sexual preference, but also Gender Defining, amirite?

Some would disagree. Many non-binary people also call themselves lesbians. It's a term with specific connotations, so some people adopt the label because the connotations are useful in describing their identity, even if they do not fit the classical definition.

Not necessarily. Simply knowing that someone is a lesbian is not enough to determine their gender. Someone who calls themself a lesbian could be a cis woman, or they could be a trans man, or many other possible identities.

At the end of the day it's not your responsibility to understand exactly what the label means to them. Labels are used for self-identification more than rigid classification.
