I think this depends on how you grew up, like you said, you grew up sometimes finding comfort in the leftovers from last night's Chinese. My parents also prefer indo-Chinese food over authentic Chinese food. It's not THAT outlandish.

I lived in Shanghai for 5 years and there was (only) one place called Lucky You that had pretty great American Chinese food.
I love all different varieties of Chinese food, but once that place opened I was ordering General Tso's at least once a week. Nothing quite hits like it for me, it has that nostalgia factor.

I always get the General Tso combination platter with fried rice and egg roll with extra broccoli and extra extra spicy. Gets me dinner and lunch the next day for under $10. My favorite Chinese comfort food.

American Chinese Food is just as authentic as Chinese food. It was invented by Chinese immigrants, and its not some white person bastardization like people might think.

Even if it was a White persons bastardization it's still authentic to that group.
And people just don't get that most food is under 100 years old.
Chili peppers are from the Americas not Asia. So your curries? Not "authentic" but popped up in the 1800s as certain ingredients were introduced to Asia.
The Bread most associated with Italy? Ciabatta? Invented by the ministry of tourism in the 1970s. No, it's not your grandmas recipe.

As somebody whose country got very rich from it, curries have existed for a bit longer than that. Vindaloo is a Portuguese loanword.
It didn't take long either. Chillis overnight, and potatoes were adopted as food in India before they were in the Netherlands or Ireland.
So on the one hand you're right, on the other hand it's kind of true.

As a Chinese immigrant, my contempt for American Chinese food really developed when I worked as a cook at Panda Express and realized that American Chinese food is really American comfort food with Chinese characteristics. It's like, okay so Americans can get their comfort food at Chinese restaurants......where do I get my comfort food? Where do I get what I want to eat if not at Chinese restaurants?

Chinese restaurant can vary from 1-10, most of them are 2-6, the 10 are rare and expensive. But American Chinese food is a steady 6. So I agree with you
