Most things represented as a bagel in North America outside of Montreal and NYC are not, in fact, bagels at all. They're just o-shaped bread.

I worked in a bagel store for 5 years. If the dough is not boiled in a kettle prior to baking it's not a bagel. It's bread with a hole in it. And no, steaming them prior to baking doesn't count either.

I feel that way about plain bagels but "everything" bagels make for the best breakfast sandwiches, IMO.
