They have more result from more maillard reaction, developing the flavor bringing out more of the bread, like when we toast bread. They have one intense side and one soft mild side, and are perfect for classic single bread sandwishes as they are divine edible plates.

The end pieces are the only part of a loaf of bread I like. If I could have a loaf that was all crust with none of the overly soft stuff inside, I'd be in bread heaven.

The end pieces are meant to keep the rest of the loaf moist. If you remove the heel then the piece next to it is exposed to more air and dries out quicker. The heels help trap moisture aginst the pieces they cover. You don't have to eat them but keep them til the end so they can keep the rest of your loaf fresh longer
