For me, it's more that the toasting makes it warm on the inside but crunchy on the outside 🙌

Growing up poor my dad would bring home food from our church's food pantry all the time. Sometimes bagels were included as one of the breakfast foods. I'd eat them straight out of the bag and I wasn't told any different. Not sure if anyone will believe me, but, up until (4?) years ago not only did I learn that you can toast bagels, but they taste LIFETIMES better that way.

I haven't done it in forever, but I used to love eating untoasted bagels. Has to be a proper bagel, and not one from the grocery store though.
