I don't know how damp your fridge is but you should probably get that looked at. Every time I've accidentally left cheese open in the fridge it just petrified within a day or two.

I believe that cheddar cheese doesn't go into fridges until it hits the supply line. The places where it's made old-style will just keep it in a old-fashioned cold-room

My method is an unsealed bag. Closed can get moldy, just sitting out dries and cracks. But an open bag lets it breathe just enough.
