Medium rare is the basic steak doneness. Perfect for fattier pieces like rib eye. Bit too much for filet mignon or flank.

Very lightly cooked, medium rare, is fine. But RAW? Nah that's how you get parasites.

The only reason there would be parasites in the meat is if it was raised in a factory farm or if it was butchered improperly. If you get the meat from a good local butcher it's completely safe to eat

Probably talking about steak tartare which is amazing. Some places in Wisconsin do a cannibal burger, which is raw ground beef with onions on a bun.
