I make spicy Korean noodles and I always put a soft boiled egg in. The warm runny yolk puts the noodles on another level. Egg yolk goes good with so many things. This is truly an unpopular opinion.

Oooh, that sounds delicious! I'm lucky my hubs can make a perfect fried egg with an almost lacy, crisp white and runny yolk. I can eat the yolk all day long - but if the egg white is soft and snotty, I'm out lol.

Over easy shouldn't have runny whites at all. That's the whole point of flipping them (the "over" part). If anything that's a sunny side up problem, but even then those should have cooked whites too…

If I close my eyes while you make Caesar dressing or a nice mustard dressing for a Brussels salad, I'm happy. But I can't look at it or I know it's just a runny yolk. I like my eggs over-rubberized, and I'm ok with that.

I totally agree. There aren't many foods I hate, but runny egg yolks is one of them. Ha, when I stayed in B&Bs in UK and they'd ask me how I liked my eggs, I'd say "Over hard," and they wouldn't believe me! Almost every time I got a soft yolk. Disgusting.

You are 100% right. I'm a chef, I like egg based sauces, egg based dressings, zabaglione, etc, but a runny yolk on a fried egg is gross to me. I like my eggs fried over hard, with crisp edges.

I don't know how unpopular this is. I know for a lot of people the texture etc of raw egg isn't something they can deal with. I love it though. Maybe for those of you who haven't tried it because of the texture you could try the Japanese dish tamago kake gohan (egg over rice). It's a raw egg or two cracked into a steaming hot bowl of rice. You mix some sugar, soy, salt and other flavorings like furikake or another spice blend that you like, and mix it all together. Pretty damn good and won't give you that visual or textural thing that turns people off. I love raw egg myself though.
