I think the issue isn't that individual restaurants are greedily charging too much. Rather that the owners cannot make rent without charging those prices.

We are finally beginning to see the high end of the market begin to backslide a bit finally. Only leeches make a living sucking on the labor of others.

This is definitely part of it. There have been several brick and mortar places in my area that have closed their doors because they can't afford rent and they don't want to jack up their prices. Because nobody wants a $25 BLT. And well, yes, it's one of the most delicious BLTs you'll ever have in your life, and the bacon is literally from the farm down the street, it doesn't matter because they can't afford to pay rent.

Or they think they should be swimming in money because they started the business. Like 7 figure yearly income consistently, even for small businesses. Customer loyalty and satisfaction usually goes out the window when owners are forced to dip into their profits deeper to cover rising costs. Should they be wealthier than most people? Sure, lf they put the blood and sweat into it. But a lot of them think they're owed more and more every year despite the brutal economy for consumers. Not sustainable.

I get in arguments with people often about Costco meat. 1. Blade tenderized. 2. The butches cut every piece into a triangle. I rather pay more for a steak that can be cooked evenly and has steak texture than save 20% and not enjoy what is still expensive for a cook myself meal.

I agree with you 100%. Their dough is bland (not fermented long enough), their sauce is mediocre, and they try to make for it by adding massive amounts of low grade, greasy mozzarella cheese. It is definitely not high quality neopolitan pizza, that's for sure.

I've been making pizza for about 10 years. 00 flour used to be 23sh for 55lbs, it's currently 43$. Pepps were around 8$ for 5lbs, currently 23$. 5lb SanMarsano cans were around 3$ now 8-11. Cheese was around 1$ now around 2.70. Now if you want to talk about a buff chicken pizza? boneless skinless thighs were around .50-.70, now closer to $2lb. So even for me where I buy in bulk from Restaurant Depot. It has gotten a lot more expensive.

Decades ago? Maybe if you are in a high cost of living area. The local place I like is about $20-25 for their large specialty pizzas which are pretty unique and great. For a more standard pizza $15-20 seems about right. Some places nearby are definitely more around $20 for standard and $30 for specialty though

Yeah, the prices have gotten ridiculous and I can't really justify paying for it to be delivered anymore. If I really need to satisfy my taste for pizza I just go to Sam's Club. It's not amazing but it's hard to beat paying $2.50 for a slice the size of 2-3 regular slices and a 30 oz soft drink.

I have a theory based on observations and discussions with folks in the industry that prices are so high now because they're all following a rule of thumb that they should sell a pizza for a multiple of the ingredient price. So if the ingredients cost them $2 before and they'd charge $10 (5x), now the ingredients are $6 and they charge $30 (5x). I see this as a combination of "not understanding economics" and simple greed. Luckily you can still get 6 pizza meals for $14 right down the street at Domino's.

In my country you want to order an elaborated pizza for 2 (like not just margherita), you easily reach 50$ (with delivery fees and stuff). It became so expensive that I bought a 200$ gas oven and made it profitable in less than 6 months, cooking pizzas that are tastier than the great majority of restaurants of a city (except that 2 restaurants where they use wood fire and real ingredients and real cooks, but they become rarer with time... and so expensive that flying to Italy, eat a pizza there and come back would be less expensive). I just followed some recipes from youtube pizzaiolos channels. It takes a bit time to do them, but the price of a single pizza is at least correct, and you are 100% sure it will be an excellent and tasty pizza. It took me paying one time too much 50$ for pizzas with plastic cheese that were lukewarm that I didn't even wanted to actually eat because for the disappointment lol

It takes a bit of practice and some minimal investment in some kitchen tools, but learning to make homemade pizza is worth it. It can be as inexpensive or fancy as you want it to be and just takes a bit of preparation getting the dough to ferment slowly in the fridge long enough ahead of time.
