When I'm doing smash burgers where I'm gonna make double cheese burgers I will but it's pretty damn easy to do. If I'm doing thicker burgers on the grill I just do the ole eyeball test

Your entire argument is based on thickness of the meat, but you know you can have thin 1/2 lb patties and thick 1/4 lb patties, right? You should measure your patty thickness if these are your concerns.

With you about height. Way too many burgers are too tall. Comically tall. There should be a height maximum; go as wide as you wide, but that would be patty thickness, not weight. I love mustard, but the ketchup/mustard combo is undeniably good. Luckily with live in a world with condiment freedom, though, so we can tickle all our own fancies.

Except I don't want lettuce, tomato, pickles, or mustard on my burger. 1/2 pound of freshly ground brisket, cooked to medium. Bacon, chipotle mayo, pepperjack cheese, red onion, and roasted poblano. Step up the quality of your patty and the flavor of your add ons and 1/2 pound won't be a problem, especially if less tall and more across.
