But they're two entirely different flavors. You wouldn't tell someone to season with whole peppers/flakes if they're using flakes/whole peppers instead, would you? Because they taste different and have different purposes.

The dry spices on a brisket you are about to smoke go on the outside to help form the bark. Salt, pepper, garlic powder. Chopped up fresh garlic isn't going to go on the same or have the same flavor.

garlic powder is dried, ground garlic. it is not artificial. also, there are times and places in this world where people practice different methods of preserving foods so that they can eat them off season. i wonder if you (OP) is one of those people who loudly wonders why Indians eat spicy food and Japanese eat so much fish. lol
