Depends on the group and depends on what mood I'm in. Sometimes I'm just looking for some casual fun, sometimes I am looking to play something more strategic. And what group of friends or family I'm with is also going to be a factor too. I'm not going to break out Catan with my 5 year old nephew, but I'm also not going to bring Candy Land to a game night with my nerdy DnD friends. Personally I don't see the simplicity of rules to actually be a big factor in how fun the game is since there is so much other context to consider.

Also, you only need to learn a complicated set of rules once. The first or second time you play that game it may be a bit time consuming, but that learning period goes away as everyone gets better at the game.

You're not alone. Games like Azul, Ticket to ride Europe, Quixx, L.A.M.A. King of Tokyo and Sushi Go are my jam. This opinion will be unpopular only with a certain crowd.

Depends a lot on the group and the mood. If we come together specifically to play board games I love to play at least one complex game. But just hanging out and wanting a quick game than simple games can be more fun.
