Even in the smallest US towns, there are enough Chinese people to have a restaurant. amirite?

Grew up in a small town in GA, we had the nicest Chinese family that owned the only Chinese Restaurant there. They came to our town specifically to open the restaurant in the 80s. Woman's sister did the same in another town not far.

The money's there to be made, just good market sense. One of the very few ways left to make an American Dream. I had one in the small town in KY where I grew up, and they loved the town and the people around them more than we could ever do in return. They also somehow managed to get their hands on fresh crab ("and it tasted fresh" -someone who has fished his own crabs), every weekend, over 700 miles from the nearest oceanic coast, and that made them quite popular.

They find towns with a demand and open them… source: my wife's family has been running these all over for like 80 years since her grandfather started . It's mostly kept in the family.

This is simply not true. I come from an extremely small town where I didn't know one Chinese person.

Yeah I live in Wyoming and there definitely is not a Chinese restaurant in every town lol. Not in Montana, SD, ND, Nebraska, or Colorado either lol.

That is not really true; "Chinese food" in the US is kind of its own thing that is enjoyed by all kinds of Americans, often regardless of whether it's made or eaten by actual Chinese people or not. There's "American restaurants" in towns in China. Are there enough, or in some cases, any Americans to make or eat the "American food" in every town? Heck no. But "American food" in China has its own identity and there are people who like eating it there.

I wasn't talking about enough people to support the restaurant, I meant enough to run the restaurant

You really just need 1 family to run the restaurant

I've lived in several small towns and none of them had a Chinese restaurant. The current town I live in has 3,400 people and we don't have one.

Nope. Source: small town Utah. I think we have like 4.5 black people and a few mexicans. The rest is white LDS.
