They do buffets in a lot of hotels in southeast Asian countries, and they're honestly really good with tons of staff who will also prepare things right there for you (stuff like omelet stations and meats). I really enjoyed having that every morning for breakfast in Thailand and Vietnam. They are also usually good on cruises. A lot of buffets I'm used to other than that can be pretty gross. There's a reason why so many local Chinese buffets get shut down for health code violations. If anyone remembers Old Country Buffet in malls from back in the day, that was another place my grandparents loved but I found to be gross.

I'd rather have not have disgusting people near my food if I can help it + I'd rather have fresher food if I'm paying for it regardless. Cruise ships are a different story bc depending on the cruise line, the restaurants are hit or miss.

I mean, cruise ship food is midgrade mass market food. It's just quantity. The only places I've ever seen GOOD buffets are very high end hotels, mostly in Asia. In any city, I'd much rather have freshly prepared and plated food whether it's streetfood or a Michelin star restaurant.

Buffet food can't reach the level of just cooked in the kitchen for you though. I just wish servers weren't a thing and you'd input your order electronically, and pick up your order at the counter when ready, but for fancy meals. I really don't mind getting up to carry my plate.

Buffet institutional food on a cruise may be better. But properly made individually portioned food in a restaurant is almost always better than buffet food due to the sheer logistics of buffet cooking and storage.
