Iced coffees are a popular thing, but I don't think it's because of how much it wakes you up. Most people drink coffee as they enjoy the taste, and the way caffeine makes them feel. Most people also prefer the experience of drinking a warm coffee to cold, and it's objectively easier to make (iced coffee must be brewed hot then cooled most of the time).

I drink decaf, so it doesn't matter. I just like the taste without having my anxiety spike throughout the day.
