I think caring about ''themes'' in a story is dumb. amirite?

if you say this then there's something wrong with you I don't really care about your opinion, but I do care about this ... who are you to judge others?

It baffles me how people can think that their opinions are objective truths

Are you trying to say that there are no stories whos entire worth is solely hinged on their unexpected endings/plot moments?

*tips fedora* hmm yes I am so intellectual and sophisticated for over analyzing children's cartoons.

Pretty much every story has a theme, or it is open to interpretation.

Plot is still more important, though. the main appeal of movies like The Sixth Sense or The Usual Suspects for example is arguably, their unexpected endings

Let's define what plot is. In a script about games, movies anime whatever we have 3 defined parts. The story which is what actually happening, the narritive which is what the piece of work presents to you and the plot which connects one one story part to the next. In naruto for example in the story Naruto is the son of the 4th hokage but the narritive hides that fact and reveals it later and the 9tails incident is a plot point. So comparing plot and theaming is kinda pointless because they serve different a different purpose
