actual japanese food tastes so… bland Japanese food is quite popular to be very salty, especially their ramen. You either have a habit of cooking foods with tons of salt, or your tongue is ruined by all those years eating too much salt.

As a Japanese food lover I don't think they're that wrong. The most basic Japanese condiments are soy sauce and miso, then there's also mirin and sake for sweetness. I would say Japanese food is mostly salty, sweet and umami and I agree that there are only very few dishes that are spicy, hot and sour (and most of those are adaptions of Chinese food).

It took me months to get used to it whilst living there, the flavours are a lot more delicate but once you're attuned to it, other foods seem unnecessarily overpowering.

As an Indian, Japanese food in Japan woke me up in a different world altogether. It literally spoke to a visage of my soul that I was completely oblivious to. It's amazing for me

I'd prefer indian foods although i never went to india and have no plans to, but there's a lot of indian immigrant's restaurant where i lived too,so it's kind of authentic i guess lol

This just depends on where you ate at. I went to Japan last year but stayed in a non-touristy area and the food was great. I'm also from the US so the food here is generally ultra processed and super salty. Like I could eat sushi everyday all day for $15 USD there. I also ate a bunch of Japanese curry. I just think it comes down to if you went to a spot that caters to tourists or not.

I visited Japan for 2-weeks in the 1990s. At the end of the excursion I was so tired of Japanese food. Bland as the OP mentioned. Salty, soy sauce, fermented or umami and tangy rice vinegar were the prominent flavors I experienced for the entirety of those 2-weeks. There was virtually no variation.

I honestly heard the same thing about the ramen there. Also, it matters where you go in Japan. The touristy spots aren't that good I've heard, which have more reviews than some of the not so touristy spots which are supposedly a lot better than the touristy spots.

Yes from what I've seen there is salt and soy sauce 90% of the time. You can taste the natural flavor of food more, unlike Indian food for example. It's a preference of course

I used to think that too, until one day I noticed in one anime that they were eating ketchup on omu rice. It was unsalted boiled rice, unsalted omelette and... Ketchup? This would taste horrible. And then I started noticing that a lot of the food they make would actually not taste that great.

A lot of Japanese food is a weird mix of foods they've taken elsewhere and made it their own. By nature, a lot of their traditional food is very simple and focuses on the natural flavours (kaiseki cuisine). Also spicy food is non-existent lol. As a fellow SE Asian it's pretty abysmal. A lot of their food is overly sweet imo with all the sauces they use.
