I've had raw cacao before, so I guess 100%. Honestly nicer than high % dark chocolate for some reason. Regardless, it's great as hot chocolate and not that bad by itself. Sure it's a bit bitter but easier to eat than 90% dark chocolate imo; no idea why

Lindt 90% is divine. I love it with my morning cup of coffee. Smooth, flavorful, and slightly sweet. Dark chocolate below 70% approaches junk to me these days. I'll do 60% if it's exotic. Trader Joe's has a variety pack during the holidays that plays around with that idea. Like, I enjoy standard candy bars every now and then but they serve a different purpose.

For me, it's just a way to have chocolate without having so much sugar. I like how it melts in the mouth, super chocolatey. Of course, milk chocolate tastes better, but I don't want just a little bit, and if I eat too much I'll feel like crap. And milk chocolate makes my teeth feel fuzzy the rest of the day; so I don't like that. For me, 80-90% tastes pretty similar, so I'll just go to 90% to make it a smidge healthier. Now, I had 99% once too and it was disgusting, so I'm with you there. To be honest I don't even know what the percents mean, I just know that the label says it has practically no sugar.

My understanding is that 70%+ chocolate does have several health benefits. Regardless it is at least a healthier alternative to people who really love chocolate, but should be staying away from Milk chocolate.

I'm a freak, I really like it. If you compare the two dark chocolate is the healthier alternative. Dark chocolate contains less sugar and no milk while having much more cacao. The high percentage of cacao creates certain benefits from consuming dark chocolate.

Ever had cocoa nibs? I'm one of those β€˜picky about textures' people, but I also get fixated on certain textures and for a while cocoa nibs were my obsession. Bitterness be damned, they had such a perfect texture. Anyway now 80% dark chocolate doesn't even phase me. I need it to be at least that dark to get the bitterness I crave. 90% is kind of pushing it imo but I still wouldn't say it shouldn't exist.

85% is my go-to. How many brands of 80%+ chocolate have you tried? Admittedly some taste horrible but if you get a quality chocolate it's the best imho. I think brands like Lindt are horrible in this range, but single-farm origin bars tends to be incredible at 80%+, in the UK I think Green & Black is great at 85%. That said, I have yet to enjoy a 99% bar.

The bitter flavor is what a lot of dark chocolate enthusiasts are in to. Luckily for everyone else, the hardcore dark chocolate is usually relegated to a very small section, with plenty of other chocolate options.

It takes some getting used to, especially if you're addicted to sugar which a lot of people are. Over time you can learn to appreciate dark chocolate. It also depends on the brand. Lindt 90% is not bad although kinda expensive. I've had high cocoa chocolate from some brands that tastes awful. My absolute favourite is Beryl's 99% which is sugar free Malaysian chocolate. It's literally the best mass market chocolate in the world for me.

The bitter stuff is for baking lol you don't eat it bitter hahahaa You add sugar to a baked good separately so a higher grade of chocolate is used
