We use chorizo in our Paella. Chorizo is a distinction factor between Catholic and Moori-Jewish communities in Spain. The Jews explicitly avoided pork in their dishes because it's not kosher according to the Torah, while the Moors also avoided pork because it's haram. The Christians and pagans however had no explicit religious restrictions.
