Italian here. Different pasta does change the flavor since certain types are more suited for different sauces. Like angel hair is better with oily sauces. If you use it with a thicker meat sauce, it would be too rich (you want flat noodles here). Orzo is better with soups. If you were to put fettuccine in the same soup, it would taste bland cause it can't hold the flavor as well. Obviously the pasta itself doesn't change flavor, but the way it holds the sauce is what's important.

Different shapes give you different sauce:pasta ratio and hold different types of sauce differently, so yes it does change the flavor. They have different texture too but I'm not going to debate on whether "texture" counts as "flavour", when "doesn't change the flavor" is already objectively wrong because a mouthful that's 90% noodle and 10% sauce doesn't taste the same as 50/50 or any other ratio you get from using different noodle shapes.
