Almost as if people might dislike certain combinations of flavors and textures and such. It that really such a difficult concept for you to comprehend? That gelatin is produced from animal carcasses (though not, contrary to your claim, from meat) is entirely irrelevant.

Sorry when I say meat, I don't specifically mean the muscle tissue, just mean animal in general. I understand that people dislike certain textures, but it's weird to me that people dislike that texture with savoury food. It would be like me only liking meat flavoured watermelon, and disliking sweet watermelon.

But why in many places people do not eat these kinds of things such as connective tissue (even when it is on their plate). Feels like learned behaviour rather than natural.

The texture you get from Gelatin in a dessert is nothing remotely similar to eating meat or connective tissue. It's derived primarily from the bones of animals and its heavily processed into either dissolvable sheets or powder. You wouldn't know it was there unless someone told you. You might say you wouldn't want to eat animal products in desserts on principle, but this is just plain stupid.
