Who said anything about simmering? I also just answered a question about who the hell boils tomatoes, which are people who make tomato sauce. There are different ways to make tomato sauce (there are different types of tomato sauce too!) that include boiling.

Boiling can just be part of the process. A lot of Mexican dishes are accompanied by a spicy tomato sauce that calls for boiling and then blending once they are cooled down. I don't think there is one way to make anything since most things come down to preference. My point was that boiling tomatoes is common and can be delicious as well! Nothing weird or odd about it.

Soups usually simmer, you don't generally boil a soup. I also wouldn't say I'm eating "boiled Broccoli" if it was part of a soup and not just a dish of only Brocolli.

Boiled veggies arnt bad, but you have to use a timer, boil a few, test the doneness and then adjust the time so you nail the cook and arnt just making mush. If you're doing root vegetables sous vide is the way to go. Put all the veggies with butter and herbs in the bag and they keep their texture far better than boiling, roasting or frying. I've never heard of anyone boiling onions or tomatoes that sounds awful.

Depends on the vegetable and how much the texture will change with boiling and how it feels when boiled. Potatoes, broccoli, and onion are great boiled. Carrots, green beans, and peppers, are terrible boiled

I agree it's the worst way but sometimes it's the only way. If I'm working and have to make lunch fast, I'm gonna boil things like potatoes and hardy vegetables.

Blanching is excellent. Haricots verts/green beans are like this, cooked briefly in boiling water and then cooled in an ice bath. Artichokes can be cooked nicely at a low boil. Tomato sauce is good, and you remove the skin by cross-hatching the end and blanching briefly. This is how you make collard or turnip greens, the former particularly need to be boiled for some time with a bit of pork to reduce bitterness. Summer squash are nice boiled very briefly in a small amount of water. Spinach is boiled, just very briefly. Vegetable soup is delicious. Carrots are good cooked in water and butter, not a ton of water but definitely some. CORN ON THE COB. This opinion is stupid.
