Outside of a restaurant this is 90% of my pork chop experience

by Krajciknovella 4 hours ago

That sucks. I love pork chops. Every time I cook them, they're nice and juicy. With beef prices the way they are, I've been going with thick cut pork chops more than steaks.

this is the historic typical experience not just for granny but most families until pretty recently^ Typically go to 150 now and happy with how those turn out I think shake n bake porkchops were good because they didn't get as dried out either.

This is exactly the reason. Fun fact about our pork: Pork does not have to be overcooked to shoe leather these days. The reason historically that pork has had to been cooked so long, is farming practices. 50 75 years ago, regulations were basically non-existent. Pigs being raised outside standing in their own s***, piss poop literally on the food. These days most pigs are raised indoors, with a specific feed. Also sanitization practices have increased. This reduces the risk for the three t's. Toxoplasma gondii, trichinosis, taenia solium. As long as your pork is cooked to an internal temperature of 145°, it's ready to eat.

Yep, medium and medium well pork have been safe to eat for decades. Obviously not ground, just like ground beef, ground pork is still recommended be basically fully cooked

Duck with blackberry sauce is amazing. I've also made duck with foraged mulberry and mugwort sauce, which is arguably even better.

We live very different lives. You are cooking with fruit I didn't know existed

Pork loin is delicious with dried plums/apricots and a port wine sauce!

Caramelized apples and onions absolutely go on a pork chop

by Anonymous 2 hours ago

yea don't use applesauce with added sugar, lol

by Medhurstcordia 1 hour ago

applesauce is made from apples, it's naturally pretty sweet, lol

by Anonymous 1 hour ago

If you make it with the right type of apple it's not.

by rachellebednar 1 hour ago

Unsweetened apple sauce is generally pretty tart. Also, BBQ sauce and rub is sweet. A lot of commercially available seasonings will contain sugar to some degree. Obviously people enjoy sweet flavors with pork. So just don't over do it. If "sweetness" is the issue then just put less apple, bbq, whatever sauce or seasoning... That seems painfully obvious.

or hear me out, if the issue is the sweet flavor of applesauce then don't put it on the pork oh hey that's what op is suggesting, crazy how that works out so wee

I'm just pointing out that it's kinda dumb to say it's too sweet considering bbq pork is sweet and it is one of the most popular ways people eat pork across the entire world. If you said bbq sauce doesn't belong on pork chops because it's sweet, you would look like a fool. It can certainly be your personal preference that you don't like apple sauce, or BBQ or whatever else on pork chops, but to say it doesn't belong because it's sweet is just blatantly ignorant. Also, as the previous person pointed out, apple sauce comes in a lot of different sweetness levels from sickeningly sweet to puckeringly tart depending on the type of apple used and the sugar added. If you're at a restaurant or a friend's house then you don't really have an option. And again, that's a fair thing to say, "most people use way too sweet sauce for pork chops." But to generalize your few personal bad experiences is again just ignorant.

Sweet is one of the 4/5 basic flavors; there's nothing wrong with using it, providing it's balanced and not overwhelming
