I love poutine but I agree it's meant to be some basic comfort food the same way a pizza is. I guess given Canada/Quebec is a relatively young country there aren't many "historic" dishes associated with it so poutine kind of got elevated as a result of that.

Cripes, I'm from western Canada. Poutine here is what you describe, nothing but fries gravy and cheese, and rarely then is it cheese curd. It isn't special. But I went to Quebec a few years ago and the poutine I had there was amazing. Yes it wasn't just fries gravy and curd, it was fancied up with a bunch of stuff. Still a poutine and was the most amazing one ever.
